Winemaking at Eeden takes patience. From preparation of the land for planting the vines to tasting the first wine has been an arduous process, accented by moments of agony but others of ecstasy. However, the journey has been worth while, because once we have tasted the first wine made from grapes grown in Eeden soil, we were compelled to continue the pursuit of unique and exceptional wines.
The terroir is well suited for red varietals, including Cabernet and Sirah. We planted Cabernet Sauvignon, as well as Cabernet Franc and Petite Sirah. This provides us the opportunity to produce single vineyard, individual varietal wines from these three grape varietals, but also to selectively blend them to produce unique wines.
Every step in the grape-growing and wine-making process at Eeden is done by expert hands, from caring for and sculpting the vineyards, selectiing only the best grape clusters, gentle crushing of the grapes, fermenting, racking, bottling, and labeling. We take care to ensure that only the best quality wine ends up in each bottle.
The 2005 release is predominately Cabernet Sauvignon with a touch of the other two estate grown varietals blended in. If you are looking for a true Bordeaux style hillside grown wine, this is the wine for you. It is made in an elegant softer style with alcohol levels lower than the valley standards, at approximately 13.5%. The wine has an appealing bouquet of red cherry, plum and berry fruits. It is nicely balanced between both red and dark fruit. As the wine opens, additional aromas are revealed including subtle notes of baking spices. This is an elegant wine both because of its balance and softness, as well as its clean finish. The oak is well integrated with the fruit and pleasant flavors show including raspberry and red cherry. For a hillside grown fruit, the wine is surprisingly soft and smooth.
